Our Wilbur® and Peter’s® lines offer a wide selection of chocolate compounds and confectionery coating colors and flavors, from chocolaty to cinnamon and maple, white to red and blue. Chocolate compounds and confectionery coatings with zero grams trans fat are also readily available.

If you are looking for something other than cocoa butter-based coatings, Wilbur has a full line of milk, dark and white confectionery coatings or chocolate compounds that are appropriate for many different applications. Confectionery coatings and chocolate compounds are often available in both wafer and block form.

H449 cocoa confectionery coating A traditional milk chocolate-like confectionery coating made with a European cocoa powder.
S856 dark cocoa confectionery coating A traditional rich, dark confectionery coating with a pleasant flavor reminiscent of sweet vanilla chocolate.
S586 white confectionery coating A traditional creamy white confectionery coating with a pleasant balance of milk and sweetness.
W753 white confectionery wafer A confectionery coating made without hydrogenated fats. Wonderful for baking applications.
W754 cocoa confectionery wafer A confectionery coating made without hydrogenated fats. It has a pleasant cocoa flavor and is ideal for baking applications.
W755 dark confectionery wafer A confectionery coating made without hydrogenated fats. It has a heavier cocoa impact and is ideal for baking applications.
H951 cocoa confectionery drop A cocoa flavored compound drop for baking applications.
W011 cinnamon drop A zero grams trans-fat baking compound drop made with real cinnamon.
V238 butterscotch drop A popular compound drop for baking, delivering a distinct butterscotch flavor.

S632 white confectionery coating A white confectionery coating with a clean, cooked-milk flavor.
#37 Darkcoat A popular choice in bakery use, this dark confectionery coating is made with a high-melt vegetable oil.
W796 peanut flavored wafer A very popular confectionery coating flavored with real peanut butter and made without hydrogenated oil.
Pristine™ white confectionery coating Similar flavor profile to S586 white confectionery coating with a brighter white color. Suitable for wedding applications or making colored coatings with oil-based colorings.
B0281 yogurt flavored confectionery wafer White yogurt flavored confectionery coating that is ideal for enrobing.

Peters® Chocolate

Peter’s® chocolate

Perfect for hand-dipping, moulding, and enrobing, Peter’s® Icecap® confectionery coatings have a creamy mouth feel with no waxiness. Not to be confused with real chocolate that contains cocoa butter, these products are made with other vegetable fats for error-free handling without the need for tempering.

Westchester® Icecap® confectionery coating A milk chocolate flavored confectionery coating, frequently used in moulded items as no tempering is required.
Eastchester® Icecap® confectionery coating A semisweet chocolate flavored medium dark confectionery coating.  Used in a variety of bakery applications.
White Icecap® confectionery coating The basic pastel confectionery coating.  Can be used as is or colored and/or flavored with oil-based products.
Peanut butter flavored Icecap® chips A sweet, creamy chip made with real peanut butter. Great for a coating or an inclusion.
