Wilbur® Chocolate Duet™ powdered mix combines cocoa powder with chocolate liquor so products can be labeled "made with real chocolate"

Chocolate as an ingredient comes in many forms, including liquid, wafers, chips and blocks. In order for manufacturers to include a "made with real chocolate" claim on their packaging, the product must include either chocolate liquor or an inclusion made with cocoa butter, such as a chocolate chip.   Inclusions are not always desirable and chocolate liquor can be difficult to use in baking and manufacturing.  Wilbur® Chocolate Duet™ powdered mix, allows food processors to use chocolate liquor for “made with real chocolate" labeling without the formulation and cost management challenges typically associated with chocolate liquor.

Chocolate liquor has two significant components: fat, called cocoa butter, and non-fat cocoa solids.  Chocolate liquor requires kettles to hold it in liquid form, or processing equipment to melt it from solid form.  The kettles or processing equipment adds expenses in the form of capital investment and ongoing energy usage.

Chocolate liquor has been converted to a powdered form with Wilbur® Chocolate Duet™ powdered mix for food processors. The proprietary powdered blend of chocolate liquor and cocoa powder offers versatility and gives food processors an easier way to formulate with chocolate liquor.

The Wilbur® Chocolate Duet™ does not require melting, processing or special storage.
