Gum arabic is a complex polysaccharide and glycoprotein mixture with gluing/binding properties. It is used primarily in the food and beverage industry as a stabilizer in soft drink syrups and beverages and in"hard" gummy candies (e.g., gumdrops). Gum arabic is also used in medicines and many other non-food applications. EmulTru™ starch provides an economical substitute ingredient for the functional properties of gum arabic in many food and beverage applications.

Gum arabic, also known as acacia gum is a natural gum made of hardened sap taken from two species of the acacia tree; Acacia senegal and Acacia seyal. It is an edible emulsifier with high-fiber and zero fat. The gum typically comes from Africa and the Middle East.
Sudan is the world’s largest supplier of gum arabic. In early 2011, Sudan’s Government News agency reported that the prices of Sudanese gum arabic were at historic highs. The prices “jumped from $2,150 dollars to $3,700 dollars per one metric ton.”1 Price volatility continues to be an ongoing concern for gum arabic.
EmulTru™ starch - reliable and efficient
EmulTru™ starch, on the other hand, is a reliable and sustainable ingredient that is derived from domestic waxy maize corn. It is an emulsifying starch that provides similar functionality to gum arabic in flavor emulsions and neutral cloud beverages. EmulTru™ starch provides efficient emulsion properties and potential cost savings of 25% over gum arabic.
Unlike traditional starches, EmulTru™ starch can be used at 18-20% solid formulation and remain liquid in cold storage conditions, which presents potential cost savings when shipping concentrated emulsions. These stable high solid concentrates can reduce transport costs and increase concentrate production rates.
EmulTru™ allows product developers to deliver an emulsion that is equivalent to gum arabic while providing purchasing departments with a cost benefit and secure local ingredient supply. It provides less foaming and sediment, which may result in potential production cost savings and increased throughput. An added benefit is that less or no filtration is required. This ease of use and production efficiency may result in potential “cost to use” operational savings.
Functionality at a lower cost
EmulTru™ starch delivers gum arabic-equivalent functionality to flavor emulsions and cloud beverages at a lower cost, with longer term emulsion stability and more consistent quality/performance. Whereas gum arabic has been traditionally used by carbonated beverage manufacturers to prevent sugar precipitation, EmulTru™ starch has functionality well beyond a single application and serves as an economical gum arabic replacement ingredient.
